SAVE MONEY, COOK AT HOME

I tweak all recipes I come across to my family’s taste and to make them as healthy as possible. You can save a lot of money if you cook at home. Here are some easy recipes to add to your weekly meal plan.

Taco CasseroleHow about a taco casserole for Taco Tuesday? This meal is a staple around my house, but plain old tacos aren't very warm and filling on a chilly night. Switch it up a little with my hearty taco casserole! Get your taco fix and stay warm friends! Kick it up a notch and add rotel style tomatoes and chiles for a spicier kick or add a layer of your favorite beans. This would also pair well with a salsa topping! This simple recipe is so versatile! Chopped bell pepper, jalapeno, would also make nice additions. We keep our main dishes fairly mild for our little kiddos, but feel free to spice it up to your own taste!
Tuesday Night TacosTuesday night tacos are a favorite at my house. I joke that I would be fired if I skipped it, but they might all leave me and go out for tacos if I failed to follow through. No joke. This is a super recipe I use ground turkey with and it never disappoints. The lime vitality oil just takes the flavor to a whole new level.
Monday Night Turkey MeatloafMonday night turkey meatloaf is another staple at our house. We have it at least twice a month, and sometimes on Sundays. Mommy likes to switch it up every now and then! It pairs well with roasted veggies or mashed potatoes and salad. It would also work nicely in stuffed bell peppers. It is a very frugal, healthy meal option I always try to have the ingredients on hand to make. It works well when you need to throw something together quickly and then get stuff done while it bakes. I highly recommend you try my Monday night turkey meatloaf, especially if you have picky eaters in your family. Both of my kids love this dish, even the one who isn't a fan of meat yet!
Frugal and Healthy Chicken FajitasChicken fajitas are an excellent dinner option when you want something frugal and healthy on the table in under 30 minutes! This meal pairs well with salad, chips and salsa, or a refried bean or even a bean salad. My six-year-old loves chicken fajitas. They are a summertime favorite at my house; quick and easy to put together and not too filling if you don't load up with sides we love to eat some chicken fajitas before heading outside to play til the sun goes down on a nice summer evening.
Sheet Pan Chicken and VeggiesTry my sheet pan chicken and veggies for a wonderfully healthy dinner! Use seasonal vegetables to make this a year-long favorite meal! In the summer I like to use yellow squash, zucchini, bell pepper, scarlet pearl tomatoes, and baby carrots. In the fall and winter months pair with butternut squash, brussels sprouts, or your other favorite veggies. Potatoes work great in this dish year-round; they make it more filling and frugal! Topping sheet pan chicken and veggies with feta makes it a lot more enjoyable getting the kids to eat their veggies as well. I get my picky six-year-old to eat her veggies almost every time with this dish!
