Monday Night Turkey Meatloaf

Monday night turkey meatloaf is another staple at our house. We have it at least twice a month, and sometimes on Sundays. Mommy likes to switch it up every now and then! It pairs well with roasted veggies or mashed potatoes and salad.

It would also work nicely in stuffed bell peppers. It is a very frugal, healthy meal option I always try to have the ingredients on hand to make. It works well when you need to throw something together quickly and then get stuff done while it bakes.

I highly recommend you try my Monday night turkey meatloaf, especially if you have picky eaters in your family. Both of my kids love this dish, even the one who isn't a fan of meat yet!

Monday night turkey meatloaf

 1 tbsp Olive Oil
 1 tsp Onion Powder
 1 tbsp Minced Onion
 1 lb Lean, Ground Turkey
 ¾ cup Bread Crumbs
  cup Low Fat or Fat Free Milk
 1 tbsp Worcestershire Sauce
 1 Large Egg White
 ½ cup Ketchup or Sugar-Free Barbecue Sauce
 1 dash Salt
 ½ dash Pepper

Preheat oven to 350 degrees F. In a large bowl mix all ingredients, except 1/4 cup ketchup or barbecue sauce.

Shape meat mixture in a 13" x 9" metal baking pan. Spread remaining 1/4 cup ketchup or barbecue sauce over top. Sprinkle with salt and pepper (optional).

Bake in the preheated oven at 350 degrees F for 60 minutes or until it reaches 160-degree internal temperature. Let stand 10 minutes before removing from the pan for ease of serving.
