Taco Casserole

How about a taco casserole for Taco Tuesday? This meal is a staple around my house, but plain old tacos aren't very warm and filling on a chilly night. Switch it up a little with my hearty taco casserole! Get your taco fix and stay warm friends!

Kick it up a notch and add rotel style tomatoes and chiles for a spicier kick or add a layer of your favorite beans. This would also pair well with a salsa topping! This simple recipe is so versatile! Chopped bell pepper, jalapeno, would also make nice additions. We keep our main dishes fairly mild for our little kiddos, but feel free to spice it up to your own taste!

 1 lb ground turkey
 ¼ cup chopped onion (optional)
 1 dash salt
 1 dash pepper
 1 dash cumin
 1 dash parsley
 1 can diced tomatoes
 ½ cup shredded cheese
 23 flour tortillas
 ½ cup crushed tortilla chips
 1 can of whole kernel corn (optional)

Preheat oven to 350 degrees F. Cook turkey on stove, seasoning as desired. Add in onions. Cook until turkey is browned and onion is softened.


Line the bottom of the baking dish with a layer of flour tortillas.


On top of tortillas layer meat, corn (if desired), tomatoes, and cheese. Repeat layers as ingredients allow. Leave some cheese.


Pour the crushed tortilla chips over the top layer then sprinkle with cheese. Bake until heated through and cheese is melted, 15-20 minutes.
