King Ranch Quarantine Chicken Casserole

This was a delicious and super easy recipe I came up with using items on hand on a night when the meal plan didn't align with what we had on hand (or cared to eat, it happens to the best of us!). I calling it King Ranch Quarantine Chicken Casserole!

King Ranch Quarantine Chicken Casserole
Yields1 Serving
 3 cooked chicken breasts (I used frozen tenderloin)
 ½ cup frozen peppers and onions
 2 cans cream of chicken soup
 6 soft flour tortillas
 1 can Rotel style tomatoes (if you have it)
 1 package Hidden Valley Ranch dressing mix
 1 tsp chili powder
 ½ cup shredded cheese (or more if desired)

Preheat onion to 350 degrees F.

Saute pepper and onions in olive oil.

Combine pepper and onions with soup, rotel tomatoes, chili powder, and ranch mix in a large bowl. Stir until mixed well.

Layer the bottom of casserole dish with three tortillas and spread shredded chicken over the tortillas.

Top with contents of bowl and spread evenly. Top with most of shredded cheese and then layer three tortillas on top.

Sprinkle the remainder of the cheese on top of the tortillas and bake about 40 minutes. Enjoy!
