Preheat oven to 325 degrees F, then grease and flour two loaf pans.
Mix flour, salt, baking powder, soda, and cinnamon in a bowl.
In a separate, larger bowl, beat eggs, oil, vanilla extract, and sugar. Add the dry ingredients to the creamed mixture and mix well.
Add in zucchini and combine well. Divide the batter between the two loaf pans.
Bake 40 to 60 minutes. The tester should come out clean. Remove from the pan to cool. Slice and enjoy!

Sometimes I add a little more zucchini depending on the size, to prevent waste. It doesn't significantly change the texture.
If you have picky eaters in your house I highly suggest grating and baking your vegetables into bread and desserts. You could even add some grated or pureed carrot to this recipe if you wanted to add more nutritional content for the little ones. Add this into your meal plan pronto!
