Today is one of my kids’ favorite days of the week; it’s Taco Tuesday! Last week I shared how to improve pizza night. And this week, I’m sharing seven ways to kick Taco Tuesday up a notch!
It’s a tradition that started as early as 1933, and if you’re a frugal friend of the blog you know it’s a regular thing on a Life on a Dime’s weekly meal plan.

Taco Tuesday doesn’t have to feel routine. It’s fun! Our kids love the concept, and I love an easy meal.
Every Tuesday night we dine on taco-related fare. There are lots of ways to make it a healthy, cost-effective meal.
FISH TACO TUESDAY
I love a good oven-fried crispy fish taco. This is typically the only way my kids will eat fish. Tilapia works really well, but other less expensive filets will do just as well.
Top it off with some fresh mango salsa and you’ve definitely got a Taco Tuesday to remember.
ENCHILADAS
If you’re looking for something a little heartier than simple tacos, enchiladas are a great choice.
Enchiladas are also one of my go-to dishes when I take food to friends or family. They’re always a hit and relatively inexpensive to make.
You can go with a tried and true recipe with tomato sauce or go for a green sauce, or even a creamy enchilada.
There are so many possibilities between the choice of meat, sauce, and even cheese. Make it as spicy or mild as you like.

TAQUITOS
Air fryer taquitos are a newish favorite at our house. I scoured recipes and ideas online, and through trial and error came up with an easy air fryer taquito recipe to share with you.
And just like the enchiladas, there are so many variations to try. We typically use chicken with either a tomato sauce or salsa verde, but ground meat and cheese would also be yummy.
TACO SOUP
What do you do when it’s Taco Tuesday, really cold, and you want to warm up over a comforting bowl of soup?
Make a taco soup of course!
TACO TUESDAY CASSEROLE
This simple, layered dish is sometimes referred to as Mexican lasagna. Unlike lasagna, I am able to cook this recipe consistently to my satisfaction.
I’d like to keep trying to perfect my lasagna, but my loving husband kindly asked me to stop after the most recent attempt. Anyways…
This dish is also customizable. We leave out jalapeƱos and go easy on the seasoning to appease the kids, but there is a lot of flavor potential with this dish.

TACO/NACHO BOWLS WITH QUESO
Skip the traditional tortilla and line the bottom of a bowl with your chip of choice. I usually just use tortilla chips. Add the taco meat and preferred toppings then top with queso. Crunch it up well with your spoon or fork and enjoy.
It’s a really simple way to change it up a bit with no added time or effort.
SHRIMP FAJITAS
Saute some bell pepper, onion, and garlic on the stovetop, throw in the cooked shrimp, and fix up some Mexican rice on the side.
Top with sour cream, guacamole, and/or pico de gallo.

HAPPY TACO TUESDAY!
