Blueberry Muffins

This is a healthier take on blueberry muffins with significantly less sugar. They are still delicious though! Try them once and you'll be hooked!

 1 ½ cups All Purpose FLour
 1 dash Salt
  cup Olive Oil
  cup Almond Milk
 ¼ cup Sugar
 2 tsp Baking Powder
 1 cup Fresh Blueberries
 1 Egg
Optional Crumble Ingredients
 1 ½ tsp Ground Cinnamon
 ¼ cup Sugar (or less)
 ¼ cup Cubed Butter

Preheat oven to 400 degrees F. Grease muffin cups or line with liners

Combine 1 1/2 cups flour, 1/4 cup sugar, salt, and baking powder. Place oil in a 1 cup measuring cup, adding the egg and enough milk to fill the cup. Mix egg mixture to flour mixture. Fold in the blueberries. Fill the muffin cups up to the top.

Crumb Topping (optional): Mix together the cubed butter, sugar, and cinnamon. Mix with fork and sprinkle over the muffins just before baking.

Bake at 400 degrees for 20-25 minutes. Enjoy!
