Every once in a while I like to change up the weekly meal plan and try new recipes, making them my own. We’ve added a few new family favorites that way. Recently I’ve found myself in a rut where breakfast is concerned. Getting our kids to eat anything but cereal or pancakes is a struggle. Today’s post is a roundup of fifteen creative and healthy-ish breakfast ideas.

Sometimes I switch it up with my reduced sugar zucchini bread or blueberry muffins, but as our kids outgrow their dairy sensitivity (thankfully!) I’m looking to expand on my repertoire of frugal, healthy-ish meals.

TWICE-BAKED BREAKFAST POTATOES

This recipe from Spoon Fork Bacon looks so delicious! I love a good twice-baked potato, and add an egg on top? Sounds and looks delicious. And I must admit, I’ve only thought to roast potatoes for breakfast as part of a skillet scramble camp-style breakfast.

OVERNIGHT OATS

I know overnight oats kind of made a comeback with the health food craze. To be honest, I always thought it sounded like a bland breakfast idea and required more planning ahead than I cared to give. These ideas from Simply Quinoa look anything but boring.

BREAKFAST SALAD

I have to admit, I was skeptical, but looking at these breakfast salad ideas from Eating Bird Food, I’m intrigued. These look like a delicious as well as a healthy way to start the day. Given how my summer breakfast tends to encroach upon brunch/lunch time adding some green to my first meal of the day seems like a good choice.

EVERYTHING BAGEL FRITTATA

This filling, but this carb-free offering from Brit+Co looks like a perfect weekend brunch dish. I especially like the idea that all those carbs were switched to protein.

CAKE FOR BREAKFAST

Whether it be sheet pan pancakes or a simple breakfast cake loaded with fruit, the kids will be delighted with this option. I have some frozen berries in the freezer that would taste great in a breakfast cake. The nice thing about this one is that it doesn’t necessarily require ingredients not already kept on hand.

HAM & EGGS SCRAMBLE

This new take on an old classic from Abundance of Flavor looks delicious and simple. Anything with croutons gets my attention. Of course, everything Kalin shares looks delicious. This isn’t her first time on my recipe round-ups and likely won’t be the last!

AIR FRYER AVOCADO BOATS

If you’re a Frugal Friend of the blog, you’ll have seen that we recently got an air fryer and have been making good use of it! As the sole avocado lover in my house, I love this two-serving recipe from Mr. Food Test Kitchen. Why eat avocado toast when you can eat an avocado boat?

  2. I wish I had the discipline and the motivation to cook breakfasts like this. My breakfasts can range from leftovers, chocolate, to an actual dinner. Lately I’ve been having a mini cheese and tomato pizza for breakfast. I tried porridge for a while with dried cranberries, but I quickly got bored of that
